Peach Crisp

It all started when Daniel had to go to Hilton Head and came back with these five big, beautiful, ripe peaches. Ten minutes later, they looked like this:
And 45 minutes after that, they came out of the oven hot and bubbly and too delicious for words...

But first, here are our variations: I didn't make the crisp in ramekins, but rather in a baking dish, which pretty much doubled the baking time. Also, we thought the lemon flavor (zest and juice of one lemon) was a little too strong and overpowered the peach flavor. So, next time - and there will be a next time soon - I'll probably just use zest and juice of half a lemon. And maybe add a little ginger...

    i'm of the opinion that fresh peaches should be served at all high level government meetings. it helps to start with an understanding of what's really important....

  3. What could be better than a peach crisp...my favorite fruit. Our little peach tree planted last spring is growing like crazy, now all I have to do is wait for about 3 more years and I too can have a peach crisp. Micki looked at some peaches for sale at a farmers market the other day, but declined to but them...so very expensive. I told her that if we could grow a peach orchard in our field we would be rich.:)

  8. Don't forget the ice cream and make room for me at the table . When I make my peach crisp I add a tad of sour cream and almond extract Yummy!!! Oops I guess that is my cobbler.

  9. Boy does that look good!!! One of my favorite desserts in the world is peach cobbler made with old fashioned oats. This looks like a variation on my favorite recipe and I can't wait to try it sometime!...May add a few apples to it too for good measure! :-) Thanks for sharing!
