Yesterday I had much planned, especially art, but then that didn't happen. I was feeling just slightly off, not much energy and so I decided to have a slow day. Even the kitty joined me.
In the course of the day I
:: did lots of knitting
:: drank tea
:: got caught up on this show
:: thought about how much I love mind-bending "stuff"
:: made these cookies
:: ate too much cookie dough
:: finished my writing assignment for class
:: thought about how much I really love to write (something I never thought I was any good at)
:: had thoughts about cleaning out our closets
:: decided to think about that another day
:: wondered if this would be the year I finally try making soap
:: didn't come to any conclusion about that
:: was grateful that we had cooked ahead and I didn't have to think about making dinner
Sometimes these slow days are just what is needed. I've learned to give in to them when I have the luxury to do so. Today, I am sure I will be back to my normal and more energetic self, even though I woke up at 2:30. What's up with that?!?

Creatures great and small
We've been wondering where our winter has gone. The temperatures have been cool to downright warm and our garden is ready to explode with spring blooms. What I hear from my family and friends in Germany, it seems that Europe is where winter is hiding. I feel for everyone who is cold and cut off from civilization because of the snow and ice.
A couple of weekends ago, while I was busy printing for class, Daniel went for a walk in the marshland along the Savannah River and saw some fantastic wildlife. By now, we are quite used to seeing the occasional alligator, but Daniel said that this one was especially impressive in its size and also that rusty color. I know that beauty is in the eye of the beholder, but to me they are magnificent creatures!The absolute highlight for Daniel though was the sighting of two rather large bobcats.
While he observed them and they checked him out, he was able to snap some beautiful photos. Isn't this a gorgeous cat? Daniel said they were about the size of a large dog, so quite big.
And then there was our kitty last night. The pictures are a bit fuzzy because I took them without a flash, but he was just so adorable in his new little kitty bed.
We've had the bed for days, but he's been avoiding it. Finally yesterday, we picked him up and sat him down in it. After a few moments hesitation he started making a nest and then took a loooong nap.
He was so cute I just had to snap some pictures...
I have another day ahead of me filled with painting and printing. Well, and tax preparations - it's that time of the year...

Margaret - new painting
Art is dominating my life at the moment and I'm loving it! This is one of those times when everything just flows and I am going with it.
I'm rediscovering my love for painting on collaged and textured surfaces. I guess I'm remembering what I loved most when I first started painting.
And here's the next painting I started. I can already see it finished in my mind. But usually it looks very different from that internal image when it's done... somehow my art is still always a surprise to me.
Thank you all for your kind comments on my blog! I always love it when you visit!! And I try to visit as many of you as I can each day. Your blogs always inspire me!!

Rowan - a new print
This print has been a couple of weeks in the making. It has gone through several stages and finally this one is very close to the finished Artist Proof. I have spent many hours at the print shop last week and will again this afternoon and I am so thrilled with how this turned out! Somehow quite sweet and just a little creepy...
I've been thinking how much my life has changed in the last three years just by opening myself up to a more creative life. This morning I reread my very first blog post and remembered how I struggled to make just a little bit of time every week to make art or something creative.
Having the blog helped me - somehow I had to have things to show to all of you. Now, I have the opposite problem - I could make art from sunup to sundown and sometimes struggle to find time for all the other things I like to do. I'm taking classes, I'm making my own art and I find that this creativity has permeated every facet of my life.
And all of that in three short years of finally paying attention to my inner voice. I witness that same phenomenon among many of us - when we start listening to those quiet (yet persistent) inner voices, there's no limit to what we can do - no matter what our age or where we are at in life!

Recipe - Puerto Rican Rice and Chicken Stew
Good morning, everyone!
I've been one busy girl here, but this morning I am taking a few minutes to share this wonderful recipe with you. It is total comfort food with a little kick! It's delicious if you eat it the same day and even a little better if you make it a day ahead. The recipe looks involved and complicated, but it really isn't at all. Give it a try!
Puerto Rican Rice and Chicken Stew (Asopao de Pollo)from James McNair's Rice Cookbook
2 tsp minced or pressed garlic
1 tsp crumbled dried oregano
1 tsp ground cumin
1 tsp salt or to taste
1 tsp ground pepper or to taste
1/2 teaspoon ground cayenne pepper
6 boned chicken thighs or breast halves, skinned if desired
3 tbsp good extra virgin olive oil
1 cup chopped onion
1 cup finely chopped green pepper (I always use a red pepper instead - we like them better)
4 oz chopped baked ham
1 cup ripe or canned chopped tomatoes, with their juices
2 cups white rice (if you use long grain, it stays a little more soupy; last time I used medium grain to make it a thicker stew)
6 cups chicken broth
1/2 cup grated Parmesan cheese
1 cup fresh or thawed frozen petite green peas
1/4 cup pitted green olives, chopped
1 tbsp drained small capers
Roasted red pepper or canned pimiento, cut in strips, for garnish.
In a small bowl, combine the garlic, oregano, cumin, and salt and pepper. Rub mixture into chicken pieces and let stand, covered, at room temperature for at least 1 hour.
Heat the oil in big stockpot or cast iron dutch oven, add the chicken and sauté until golden on all sides. Remove the chicken and reserve.
Add the onion to remaining oil (add more oil if necessary) and the sweet pepper and saute until soft but not browned, about 5 minutes. Add the ham and tomatoes and saute about 5 minutes longer.
Return the chicken to the pot, reduce heat to low, cover and simmer about 20 minutes. Transfer the chicken pieces to a cutting surface. When cool enough to handle, cut the chicken into bite-sized pieces; reserve.
Wash and drain the rice. Increase heat to medium-high. Add the rice and sauté for two minutes until all grains are well coated, about 2 minutes.
Stir in the stock and bring to a boil. Reduce heat to low, cover and simmer until the rice is tender, but still soupy, about 17 minutes.
Stir in the cheese, peas, olives, and capers and the reserved chicken. Cover and simmer until the cheese melts and the other additions are heated through, about 5 minutes.
Serve in individual bowls garnished with the pimento strips.
