Of Food and Summer

During the summer, Daniel and I eat a lot of Mediterranean food - it's tasty, it's fresh and wonderful summer fare. This year, for the first time, I made two batches of preserved lemons, which are used quite a bit in middle eastern cooking. Aside from using them to cook with, I think they look so pretty and cheerful, which is a good thing as we can't eat them for another month and can do nothing but enjoy the looks of them!
One of our main staples of summer food (aside from our standard green salad), are fresh veggies and toasted pita bread with hummus, a chickpea dip, and baba ghanoush, a middle eastern eggplant dish. Both are delicious and we can't seem to get enough of them! What are some of the dishes you enjoy most in the summer months?

Oh, before I forget, I was pleasantly surprised to find a post about my blog at Liberty Post. The talented Patti gave us too much credit with the home we own (you'll see if you read her post), but I was so touched she likes my blog and finds my life interesting. I have to say, that always surprises me a little because to me, it's just...you know...my life.   1. the last one it's such a pretty pic!! we eat lemons too here in Italy as a fruit or we cook a lots with lemon or lemon juice :)

  2. I think you just prepared the perfect meal. That is exactly the kind of food we enjoy around here. We were just talking about what we would do if all of our eggplants did well this year, I will have to give the baba ghanoush a try.

  4. oooh, i would LOVE to have an entire row of those preserved lemons in jars sitting on my kitchen counter! what a beautiful color....and i love the simplicity of it! your salad looks so refreshing (what time did you say lunch is? hee hee)

    and....your driveway is absolutely GORGEOUS!! you live in a beautiful area (i'm just a couple hours south of you!)! :)

    I have a similar spicy preserved lime or lemon recipe from Surinam I use as a side dish.
    I also love the mediteranean cuisine as well.

  8. Yummy! I love to make a super easy pasta dish in the summer. Fettucini with sage, garlic, parmesan and optional proscuitto crudo. Fast and delicious. But you need fresh sage.

  10. HMMmmm, Fresh Peach cobbler that is my favorite summer dish, but I love to just set out appetizers on the patio and Mediterranean is perfect for that .You are right the lemons look lusciously beautiful . !!!
